Homemade buttermilk is the slightly sour, residual liquid that remains after butter is churned. It sometimes contains tiny pieces of sweet butter, which was missed during the skimming process. Much of the commercially made buttermilk today is created by adding lactic acid to whole, skim or low fat milk and letting it ferment. Some people find buttermilk easier to digest than standard cow's milk.
